-600 g mushrooms
-olive oil
-1 finely sliced onion
-2 trimmed and finely sliced sticks of celery
-3 peeled and sliced cloves of garlic
-parsley stalks and leaves, thyme leaves
-1,5 litters chicken or vegetable soup
-salt, black pepper,
-75 ml single cream
-5 slices ciabatta bread

The preparation of soup recipes is usually very simple and the mushroom soup makes no exception. You start by peeling of the mushroom skins and then you slice the mushrooms in thin slices. In the meantime you heat a splash of oil in a saucepan . When the oil is heated you add the celery, onion, garlic, parsley, thyme and mushrooms. You put a lid on top and you gently sweat until the mushrooms are soft. Then you take four tablespoons of mushrooms and you put them aside. You pour the soup in the saucepan and you leave it over medium heat until it starts to boil. Once it starts boiling you turn down the heat and leave the mix on for another fifteen minutes. You season it with salt and pepper and then you mix it in a blender until it turns into a cream. Then you bring the cream to a boiling point again and then you turn off the heat. In the meantime you can toast the slices of ciabatta and when they are done you put the reserved mushrooms on top of them and add a bit of olive oil. When you serve the soup you can garnish it with the remaining mushrooms, the parsley leaves and serve it with the ciabatta crostini.
